Live Strong

I've recently started taking advantage of www.livestrong.com  it's free and so awesome!  I want to loose the weight I gained from the holidays/being depressed after the holidays haha. Livestrong has free calorie counting, and fitness tracking.  You input your data and how many lbs you want to loose in a week then it tells you how many calories you can have each day.  It also tracks the nutrients, fat, cholesterol ect. from food you are eating.  It also has a feature you where you can make your own recipe and then it tells you the calories per serving.  All the features are so nice, I am seriously in love with it!  I logon every time I eat something, it takes all the guess work out and it's  user friendly.  I lost 2 lbs last week!  I am only trying to loose 1 lb a week, but I'll take 2 lbs :)  So cheers to feeling better and being healthier!  Seriously go check out http://www.livestrong.com/ !

Cauliflower? Yes please!

I've had a new discovery and I love it!  Saturday night I made Chicken Alfredo but with cauliflower.  Let me tell you, I couldn't even tell it had cauliflower in it and it tasted sooooo good!  I cut up and cooked a whole head of cauliflower, then purĂ©ed it to a creamy consistency.  Here is the recipe I did... I'm telling you you'll love this healthier alternative!

1 head of Cauliflower (pureed makes about 3-4cups)

1 small oinion
2 cloves of garlic
3-4 tbs butter
3-4 tbs flour

1 cup half and half
1 cup Chicken broth
1/2-1 cup grated Parmesan or Romona cheese  
salt and pepper to taste.

Cut up cauliflower cook in water with a little bit of salt and pepper for about 10 mins or until soft with the lid on.  Then cook with lid off until the water is almost gone.  While the cauliflower is cooking I sauteed the onions and garlic in a little butter until soft.  Once the cauliflower is done I put in a blender or you can use a hand blender add the onions and garlic to the cauliflower then blend until creamy.

Now in a sauce pan create a Rue by melting the butter then add the flour and whisk it. let the flour cook for a min to cook out the flour taste.  Then whisk in the cauliflower mixture, half and half, and chicken broth.  I also added some salt and pepper.  Once it has thickened then add the cheese and salt again to taste.

You can add in chicken and broccoli too like I did.

This recipe feeds 5-7 people.

Birthday Wishes

My Birthday is just around the corner, I have been giving lots of thought on what I want this year.  Here is my little wish list!

1. Pedicure ( I love my toes looking pretty. I usually give myself a pedicure but since it will be my birthday it would be nice for someone to pamper little)
2. Dinner out ( I really don't want to cook on my bday)
3. New running shoes (which is only wishful thinking!)
4. New eyeliner (I'm almost out!)
5. No crying/screaming from my children
6. My house to magically stay clean (5 and 6 I know are really really wishful thinking haha )


Time will only tell how many of these wishes will come true, but a girl can wish....right??

Carson Carson Carson...

My lovely child has just turned 2 and he is definitely in his terrible...which aren't so terrible I actually love my little 2 year old to death!  He is getting into more things though  here is proof!  He loves putting things in his hair, this time it was Vaseline which he decided to do 2 days in a row. lol
Just so you know you Vaseline does come out it just takes about 12-14 washes with degreasing dish soap to do it! lol  Oh Carson how I love you soooo much!

The New Year!

The New Year means a new start for me!  But alas It hasn't been much of a new start so far :(  Getting over missing my family has been ridiculously hard for me!  I don't like being so far away from them....they just have to be sooo awesome.  I am determined however to get on with my life and be fine. So starting tonight I am going to start working out again and try to interact with people older than 6...unless you count the missionaries who have been over to my house twice this week.  Speaking of the missionaries ...I love our current missionaries Elder Goff and Elder Fairbanks!  I love having them over...so sweet and innocent, and my kids adore them.  Having them over reminds me of when I was little living in Texas, the missionaries were at our house all the time...doing their laundry and my mom cut their hair too.  Such good memories I have, and now I get to share those kinds of things with my kids!

Anyway back to the New Year I truly want this year to be better than last year.  I have a lot of work to do on myself to get where I want to be.  I am excited for what 2011 has in store for me!
